The indoor vanishing-edge pool is flooded with natural light from a large skylight, while the adjoining whirlpool looks toward the surrounding landscape. Elsewhere, eucalyptus-infused steam rooms and red-cedar, stone-heated saunas turn an afternoon treatment into a much longer ritual. Separate women’s and men’s lounges are joined by a co-ed quiet lounge, while the private Sky Suite lounge can be reserved for a more secluded retreat.
Treatments draw inspiration from the region, incorporating botanicals and ingredients connected to the surrounding landscape and the resort’s own garden. And for those inclined to make a full day of it, the Spa Café serves salads, sandwiches, sweets and beverages in a relaxed setting. Wellness continues in the fitness studio, reserved for overnight guests and outfitted with Technogym equipment, treadmills, rowing and spin machines, strength equipment and free weights. Personal training and yoga can also be arranged in advance.
The Allison is particularly good at the increasingly rare luxury of giving guests somewhere beautiful to simply spend time.
Walking trails weave through the 35-acre property, past gardens, artwork and views of the surrounding valley. Guests can wander through the 1.5-acre Chef’s Garden, where vegetables, herbs and edible flowers are harvested for the kitchens at JORY. Ten onsite bee colonies help pollinate the garden and produce nearly 300 pounds of honey annually, some of which finds its way into the resort’s culinary program.
Back inside, The Living Room becomes a natural gathering place. Coffee and tea are offered in the morning, while evenings bring cocktails, wine and live music Wednesday through Sunday. A fireplace adds to the residential atmosphere—particularly welcome after a cool Oregon afternoon among the vines.
Complimentary valet and overnight parking, concierge service and property-wide Wi-Fi are among the practical touches, while airport and rental-car transportation can be arranged through the resort.
At The Allison, the connection between land and table is perhaps most tangible at JORY, the resort’s signature restaurant. Rather than treating its Oregon location as mere inspiration, JORY builds its culinary identity around it. The restaurant works with local farms and producers while drawing ingredients directly from The Allison’s Chef’s Garden, where the culinary and gardening teams collaborate on seasonal plantings based on what will eventually appear on the menu. The result is a dining experience rooted firmly in the Pacific Northwest: seasonal, ingredient-driven and refined without feeling unnecessarily formal. Dinner can be enjoyed à la carte or as a multi-course tasting menu, with optional wine pairings selected from the cellar.
There are several ways to experience the restaurant. The main dining room offers the most traditional setting, while an eight-seat Chef’s Counter places guests directly in view of the kitchen. The Living Room and adjoining bar provide a more relaxed alternative with full-menu service, and an outdoor terrace—with a fireplace and heaters for cooler months and sun shades and misters in warmer weather—allows dining to spill into the landscape year-round.
For something more intimate, JORY also offers a Chef’s Table for up to ten guests and a private dining room for twelve with its own terrace and pre-dinner cocktail area. Breakfast and brunch are equally deserving of time, reinforcing one of the great pleasures of staying at a true resort: there is nowhere one particularly needs to be. JORY maintains an extensive cellar that celebrates Oregon producers alongside bottles from renowned wine regions around the world. The program gives particular attention to the surrounding wine community, including environmentally conscious, organic, biodynamic and sustainably produced wines.
